White Lady

If I have an egg white to use up, I make a White Lady.

Ingredients

  • 45ml gin
  • 22ml cointreau
  • 22ml lemon juice
  • 7ml simple syrup
  • 1 egg white

Method

  1. Combine all the ingredients in a cocktail shaker without ice and dry shake vigorously for 30 seconds to emulsify the egg white.

  2. Add ice and shake again for 15-20 seconds.

  3. Strain into a chilled glass.
