Koldskål ice cream

In Denmark, there are loads of artisan ice cream shops open in the summer. They often have less common flavours, but also the general quality is very high, all homemade etc. I really love koldskål, and koldskål ice cream has become my favourite, along with lakrids.

Ingredients

  • 250 ml full cream
  • 3 egg yolks
  • 80g granulated sugar
  • Zest of half a lemon, chopped very small
  • 1 tsp vanilla sugar
  • 1 tblsp lemon juice
  • 100 ml buttermilk (kærnemælk)
  • 100 ml very thin plain pouring yoghurt (A38 tykmælk)

Method

  1. Whisk egg yolks, sugar, and vanilla sugar into an airy mass.

  2. Whisk the cream into whipped cream.

  3. Mix whipped cream, lemon juice, lemon zest, yoghurt, and buttermilk into the egg/sugar mass.

  4. Pour into the ice cream maker and follow the manufacturer's instructions.
